What I love most about this is that I usually have all the ingredients right in my kitchen so I can whip this up in literally no time! And the results? A comforting, warm, delicious and adaptable meal!
NOTES: I like to use dry beans and leftover cooked chicken but you can adjust this to use up canned beans and raw chicken. I’ll dive into the details in the recipe below:
YIELDS: 4-6 SERVINGS
PREP TIME: 10 MINS
TOTAL TIME: 40 MINS
INGREDIENTS FOR THE SOUP
2 tablespoons olive or avocado oil
1 onion (diced)
4 cloves garlic, smashed and minced (I smash garlic with the side of my blade and quickly mince)
2-3 carrots, chopped
1 celery, chopped
1 (14.5-oz.) can fire-roasted diced tomatoes WITH juices (no worries if you don’t have fire roasted on hand)
1 (4-oz.) can mild green chilies
1 cup dry black beans OR 1 (15-oz.) can black beans, rinsed and drained
4 c. chicken stock or broth (homemade or store-bought)
2 lb. pre-cooked chicken OR raw chicken thighs or breasts
2 c. water
2 tsp. dried oregano
2 tsp. ground cumin
2 tsp. chili powder
2 tsp. salt
FOR GARNISH (Choose a variety of your liking!)
Cilantro
Tortilla Strips or Chips
Chopped onions
Grated cheese
Sour Cream
Avocado slices
Lime wedges
Scallions
Fresh Jalapeño slices
Salt and Pepper to taste
DIRECTIONS
1. SAUTE VEGGIES: Turn on Saute function of instant pot, add oil and saute chopped onions for 2-3 minutes. Add in garlic, carrots and celery and saute for another 2-3 minutes.
2. ADD CANNED LIQUIDS: Add the can of fire-roasted tomatoes with juices, green chilies, black beans, chicken stock, water.
3. ADD CHICKEN: Throw in leftover chicken pieces OR cube up and add raw chicken — OH and please salt and pepper your raw chicken before you throw in — my husband would literally notice if I don’t.
4. ADD SPICES: Add oregano, cumin, chili powder and salt.
5. STIR AND CLOSE INSTANT POT: Stir soup and set your instant pot on high pressure for 22 minutes if using dry black beans, or 14 minutes if using canned black beans.
6. NATURAL PRESSURE RELEASE: I usually just let my soup naturally release but you’re welcome to manually release the pressure if you can’t wait patiently 😉
Pour soup into your favorite bowl and garnish with your fave toppings!
PS: You’ll hopefully have some leftovers that definitely taste better the next day. You can even pop a portion in the freezer — I always reserve a portion for Eddie to enjoy at work via mason jar and lid like this 😉
